Happy first day of fall! š Thereās something about this season that makes baking feel extra cozy and comforting. Sundays are my special day to unwind, and one of my favorite ways to relax is by baking cookiesājust me, myself, and a lot of dough!
After a week of running around with the kids, managing school events, sports, and everything else, I look forward to spending a quiet Sunday afternoon in the kitchen. Thereās no better way to kick off fall than with the smell of cookies filling the house!
Why Sundays?
Sundays have always felt like the perfect day for a little baking therapy. Itās the calm before the storm of the upcoming week, and having that time to myself gives me a moment to recharge. Plus, what better way to welcome fall than with a batch of freshly baked cookies?
My Go-To Cookie Recipes
When it comes to cookies, I like to keep things simple yet delicious. These are a few of my tried-and-true favorites:
- Brown Butter Chocolate Chip Cookies: The ultimate comfort cookie. Soft, chewy, and perfect with a cup of coffee, simply irresistible!
- Peanut Butter Blossoms: The peanut butter and chocolate combo is always a win in my book.
- Oatmeal Raisin Cookies: I tell myself theyāre healthier because of the oats and raisins. š
- Pumpkin Spice Cookies: Now that itās fall, these are a must! Theyāre soft, spiced, and everything I love about autumn in cookie form.
Since itās officially the first day of fall, I thought Iād share one of my favorite recipesāBrown Butter Chocolate Chip Cookies. These cookies are packed with the delicious, almost nutty, taste of brown butter. I actually discovered this fantastic recipe on Pinterest, thanks to Dianna & Alyssa over at In Fine Taste. Whether youāre baking for your family, friends, or just for yourself (like me!), these cookies are sure to bring that comforting fall vibe into your kitchen. And I promise, everyone will love them and be begging for more.
Brown Butter Chocolate Chip Cookies
Ingredients
- 1 1/4 cup butter
- 3/4 cup sugar
- 1 cup firmly packed brown sugar
- 2 large eggs
- 1 tsp vanilla
- 2 3/4 cups flour
- 1/2 tsp salt
- 2 tsp baking soda
- 2-2 1/2 cups chocolate chip (I use milk chocolate but you can use whatever you prefer)
Instructions
- Brown 1 1/4 cups of butter in a medium-large saucepan, stirring constantly over medium-high heat, until you reach a deep honey color. Remove from heat and pour into your mixing bowl. Cool butter in fridge or freezer until room temperature consistency, you want your butter to be solid. If you use it when its still liquid your cookies will be flat.
- Preheat over to 375 degrees Fahrenheit. Grease baking sheets with cooking spray or line with silicone mats or parchment paper.
- Once butter has set up, cream together butter and both sugars for 1 minute. Add in eggs and vanilla for an additional 2-3 minutes until the mixture is pale and fluffy. (make sure you get all those tasty brown bits at the bottom of your brown butter!)
- Add in flour, baking soda, and salt. Only mix the dry ingredients in until just barely combined – over mixing will make the cookies tough. Stir in chocolate chips.
- Take 1/4 cup of dough and shape into round balls bake for 8-10 minutes at 375 degrees Fahrenheit until the top and edges are just golden. Cool cookies on baking sheet for 2-3 minutes before moving to a cooling rack.
My Baking Ritual
Sunday cookie baking has become a personal ritual. I get to unplug, turn on some music or a podcast, and let the stress of the week melt away as I mix, roll, and bake. Itās my little moment of peace in the midst of a busy life.
The Best Part? Sharing (When I Want To!)
Of course, I donāt eat all the cookies by myself (though Iāll admit, Iāve come close). I love sharing the treats with family, friends, or even packing a few for baseball games. It’s also a great way to prep for the week of lunches ahead because everyone loves a sweet little treat added to their lunch!
